Instructions:

Combine the durum flour and 1 cup all-purpose flour in a mixing bowl and stir in the water and salt – stir until smooth.

Let the batter rest for 30 minutes.

Bring a large pot of salted water to boil then add 1 tablespoon olive oil.

Place a spätzle maker on top of the pot and pour half of the prepared batter into the sliding box portion.

Slide the box back and forth, allowing the spätzle to fall into the boiling water.

Refill the box with the remaining batter and repeat.

Let the dumplings cook for 1 to 2 minutes until they begin to rise to the top of the water.

Spoon out the cooked dumplings using a slotted spoon and transfer them to a colander to drain.

Preheat the oven to 400°F.

Combine the remaining ingredients in a food processor and blend until smooth and well combined.

Transfer the spätzle to a baking dish and pour the sauce over it.

Bake for 30 minutes until hot and bubbling then let rest at room temperature for 10 minutes before serving.
